Tahini
A vital ingredient to hummus, this sesame paste is very versatile and can be used as a base for salad dressings, sauces or in Spicy Szechuan Noodles.
1/2 cup sesame seeds, roasted and cooled
2-4 tbsp. olive oil
pinch of sea salt
To roast sesame seeds, place in a single layer on a baking sheet and put into a pre-heated 375 degree oven. Toast for approximately 7-8 minutes, depending on how dark you want the seeds. I like mine still slightly blonde. Remove from oven and let cool. Place the sesame seeds in a food processor or spice grinder, pulse until finely ground. Add the olive oil and salt and process until a paste forms. Store the tahini in an airtight container in the refrigerator for up to 3 months. Makes 1/3 cup.
