Pumpkin Spice Coffee Cake

The key to this coffee cake is fully mixing your wet ingredients BEFORE mixing with the dry. Add your dry ingredients little by little. Make yourself a cup of tea or a cup of coffee while you bake and absolutely play some music. Enjoy!

1 cup softened butter
2 cups granulated sugar
2 eggs
1 tbs vanilla extract 
1 cup of pumpkin puree
2 cups of all-purpose flour
1 tbs our Pumpkin Pie Spice 
1 tsp salt
1 tsp baking powder
1/2 tsp of baking soda

Streusel topping/filling:
1/4 cup of flour
1/4 cup Pumpkin Pie Spice
1/4 cup Cinnamon Sugar
4 tbs cold butter

How to Make:

Preheat oven to 350, grease spring form pan and lightly dust with granulated sugar. Set aside!

Combine butter and sugar until light and fluffy. Add the eggs and vanilla, mix until fully incorporated. Add your pumpkin puree, texture will look like it’s separating but that’s normal. Set aside and combine all of your dry ingredients in a separate bowl. Mix dry ingredients and then slowly add them into the wet ingredients until combined. Set aside.

Make streusel by combining dry ingredients and adding the cubed cold butter. Mash with fingers until crumb-like texture. You can pulse in a food processor if you'd like! Pour half of the cake batter into your pan, add generous amount of streusel, fill the rest of the pan with cake batter and then top again with streusel.

Bake at 350 for an hour or until a toothpick comes out clean. Share it or eat this all to yourself.
