Indian Green Cabbage

Ingredients:

1 1/2 lbs. green cabbage
1/4 cup olive oil or ghee
3/4 tsp cumin seed
1/2 tsp fennel seed
1 tsp white sesame seeds
1 med onion, peeled and cut lengthwise into thin half rings
1 tsp salt
1/8-1/4 tsp cayenne pepper
1 tbsp. lemon juice
1/2 tsp garam masala

Directions:

1) Remove coarse outer leaves from cabbage, cut cabbage into fourths and core each section.  Cut each quarter into fine, thin shreds.

2) Put oil in a wide skillet over med-high heat.  When oil is hot, add cumin, fennel, and sesame seeds.  As soon as sesame seeds begin to pop, add onion, stir and fry for 3-4 min. or until onion begins to brown, add cabbage, stir and fry for 5-6 min or until cabbage borwns, add salt and cayenne.

3) Turn down heat to med low and cook, stirring periodically, for another 7-8 min or until onions appear caramelized and soft.  Add lemon juice and garam masala and stir to mix.
