Everything Bagel Blend Chicken Tenders Salad

One of our favorite ways to use everything bagel blend is in this quick and easy recipe for chicken tenders and salad from Eating Well magazine.

2 tbsp all purpose flour
1 large egg
1/2 cup panko breadcrumbs
1 tbsp everything bagel blend
1 lb. chicken tenders
1/4 cup grapeseed or canola oil
2 tbsp extra virgin olive oil
1 tbsp white wine vinegar
1 tsp Dijon mustard
1 tsp honey
salt & pepper to taste

1.  Place the flour in a shallow dish and lightly beat the egg in another shallow dish.  Mix the breadcrumbs and everything bagel blend in a third shallow dish.  Dredge the chicken tenders in flour, then egg, then breadcrumbs.

2.  Heat the 1/4 cup of oil in a large skillet over med-high heat.  Add the chicken tenders and cook, turning once, until golden and an instant read thermometer registers 165, about 8-10 min. total, adjusting the heat as needed to prevent burning.

3.  Whisk the olive oil, vinegar, mustard, honey, salt and pepper in a large bowl.  Add the greens and toss to coat.  Serve the greens topped with the chicken.

Serves 4:  3 oz. chicken & 2 cups salad per serving.
