Apple Crumble Cake

I found this recipe online and tweaked it a bit to my liking (I don't like richly sweet desserts and I believe freshly ripe apples should be the star of the show) Follow this recipe for a delicious treat!

This recipe is broken up into three parts: crumb, apples, cake. All of which come together to make one!

Ingredients: 

  • Preheat oven to 350, line a 9X9 cake pan with parchment paper (or grease well)
  • Crumb:
  • 1/4 cup melted butter (salted or unsalted, your choice)
  • 1/3 cup light brown sugar OR I used coconut palm sugar
  • 1/3 cup granulated sugar
  • 1 tsp saigon cinnamon
  • 1 tsp ceylon cinnamon
  • pinch of salt
  • 1 1/3 cup flour Mix until combined into crumb-like texture, set aside

 

Apples:

  • 3 medium sized apples (preference of apple is on you, I had lovely friends bring apples from their yard!)
  • 1 juice of a lemon
  • 2 tbs Pat's Pantry In-House Blend, Cinnamon Sugar
  • Toss apples, set aside

 

Cake:

  • 6 tbs softened butter
  • 1/2 cup of sugar
  • 1 egg
  • 1/3 cup Greek Yogurt
  • 1 tsp of vanilla extract or vanilla paste
  • 1 cup flour
  • 1 1/4 tsp baking powder
  • pinch of salt

How to Make:

Mix butter and sugar until combined, then add your egg and yogurt. Mix on low, add the vanilla. Combine your dry ingredients a little at a time until combined. Cake mixture will be slightly thick. Now prepare your cake! In your 9X9 cake pan, place all of the cake batter on the bottom, then layer with apples, and top it off with the crumble. Bake for about 45-50 minutes (time will vary based on oven) and serve alone or with vanilla ice cream. Enjoy!
