Taste and Aroma: Made from the whole pepper. Sun-dried, stemmed, seeded and crushed, these red pepper flakes are most commonly found in the Middle East and in Eastern Mediterranean cuisine. Medium-hot (about the same as Aleppo chili), the flakes can be blended with lemon juice and other spices to create a rub for meats. Use them to flavor olive oil for pasta, rice or greens; sprinkle them over a fresh citrus and fennel salad.
