In-House Jerk Seasoning Biscuits and Gravy


Start your morning off slow. Take your time pouring your tea or coffee and make this wholesome biscuits and gravy recipe for your next cozy morning. These homemade biscuits aren’t intimidating (though you can opt for store or bakery bought) and the gravy will truly warm your stomach.


Ingredients:

Biscuits:
  • (Makes roughly 8-10 biscuits)
  • 2 cups flour (250 grams)
  • 1 tbs baking powder
  • 1/4 tsp baking soda
  • 2 tsp sugar
  • 1 tsp salt
  • 6 tbs COLD butter, cubed (85 grams)
  • 3/4 cup of cold buttermilk (and a little more for the tops of biscuits) 180 ml

Gravy:
  • 1 lb pork sausage (for vegetarian, use your favorite meat-free sausage or use an array of freshly chopped mushrooms)
  • 1/3 cup of flour
  • 3 to 4 cups of whole milk, more to taste 
  • 1/2 tsp Salt
  • 2 tsp Ground Black Pepper
  • 3 tbs In-House Jerk Seasoning
  • 1 tbs porcini mushroom powder
Garnish:
  • Thinly sliced Jalapeno and Green Onions

How to Make:

Preheat the oven to 450F (230C)

For the biscuits, line large baking sheet with parchment paper or silicone baking mat, and set aside. Combine all dry ingredients until they're all happy together. Add the cubed cold butter and use pastry cutter, food processor, fork, hands, whatever works for you so that you have small pieces of butter mixed in. Pour cold buttermilk into mixture and gently mix until the dough starts to firm. 

Scoop the dough onto a slightly floured surface and sweetly work the dough together in your hands. Pat the dough into a rectangle and fold it into thirds (this creates the layers in the biscuits) Gather whatever crumbs fall astray and repeat folding process 2-3 more times, like you're tucking in the dough to bed.

Once in a rectangle-folded blanket shape (roughly 1/2 inch thick), cut with a knife or biscuit cutter until you have 8-10 cute biscuits

Arrange cute biscuits onto baking sheet and brush with buttermilk, bake for 15-17 minutes until lightly-golden brown. 

*While these bake...you can make the gravy!!!*

In-House Jerk Seasoning Gravy:

In a cast iron pan, melt butter or preferred cooking oil and put in the pork sausage (You can use whatever your preferred meat or vegetarian options at this point). Season with Jerk Seasoning and cook until brown and no longer pink. Sprinkle HALF the flour and stir so that the sausage soaks it all up, then add little by little. Stir around and show it some love, then add the milk and stir constantly. Add porcini mushroom powder, and pepper and cook. Begin stirring frequently so that it thickens. If it gets too thick too soon, just add more milk for your desired gravy consistency. 

Spoon the gravy over those fresh biscuits and garnish with thinly sliced Jalapeno and green onion
