Chicken Tortilla Soup

Although a hot soup, this recipe is made with bold, fresh, and wholesome ingredients that make it a year round favorite. The key here (like any soup recipe) is building a hearty broth. Combining our spices with fresh aromatics will give you the soup you've been needing. 


Serves 6-8


1 yellow onion

4 garlic cloves

1 jalapeno (if desired)

1 can diced tomatoes 

1 can white beans 

1/4 cup epazote 

1 tbs dried Mexican oregano

2 tbs ground cumin

1 tbs New Mexico red chili powder 

salt to taste

2 chicken breasts

Toppings: chopped avocado, sliced radish, fresh cilantro, lime wedges


Place soup pot or dutch oven on medium high heat, add some oil and sautee chopped onion, garlic, and jalapeno (if desired)

add chicken breast and remaining soup ingredients to the pot. Bring to a boil and then simmer for 25-30 minutes

remove chicken and shred, add chicken back to the pot and simmer for another 5 minutes

 serve soup  in your favorite bowl and add whatever toppings you fancy!!
